Cinnamon rolls have been one of the treats I’ve missed the most since being diagnosed with celiac disease, but I was never able to find a quick recipe to make them… so I created my own! Forget spending hours making dough from scratch; having to deal with yeast and waiting for everything to rise. Now you can make them with a few simple ingredients!
- Molly B’s gluten-free pizza dough
- 1/4 cup butter
- 1/2 cup sugar
- 1 1/2 tbsp cinnamon
- 1 tbsp brown sugar
- Betty Crocker cream cheese icing
Adding small amounts of water to the dough knead until pliable. Using a rolling-pin roll out dough into a rectangular shape. Melt butter and brush onto the rolled-out dough. In a small bowl combine sugar, cinnamon and brown sugar. Sprinkle cinnamon sugar over dough, leaving a small remainder for the outside of the cinnamon rolls. Very carefully roll the dough length-wise along the longest edge. Sprinkle with remaining cinnamon sugar. Cut dough into two-inch increments and place in greased pan. Bake at 400°F for 10-15 minutes. Let cinnamon buns cool partially before icing.
