It’s that time of year again – pumpkin spice season!!! I have to admit I’m a huge fan of pumpkin spice (haters gonna hate) – so I thought I would share a new recipe with you incorporating the spice of autumn. I hope you enjoy this recipe as much as I do!
Ingredients:
- 6 slices gluten-free bread of choice
- 3 eggs
- milk (splash)
- 1/2 tsp pumpkin pie spice
- 1/4 cup sugar
- 3 tbsp cream cheese
In a small bowl whisk eggs. Add a splash of milk, pumpkin pie spice and 1 tsp of sugar (saving the remainder) – whisk until combined. Heat a large pan over medium heat. Dip bread individually in egg mixture and place in pan. Sprinkle with sugar and cook until golden brown, remove from heat. In a small bowl combine cream cheese and remaining sugar. Spread cream cheese onto bread and place two pieces together to create a sandwich. Over low heat, place sandwiches back in pan to melt cheese. Remove from heat once desired consistency is reached.
Makes 3 sandwiches
